Preheat the oven to 190°C

Beat the butter and sugar until light and fluffy.

Add the eggs, yogurt, milk and vanilla extract. Beat until combined.

Add the flour and baking soda. Stir to combine.

Spoon the mixture into a muffin pan lined with paper liners.

Top each muffin with a apricot half, or slices.

Bake for 25-30 min or until a skewer inserted in the centre of the muffin comes clean. They will rise and become golden.

Let them cool at room temperature and then serve.
